This recipe is so incredibly simple, you only need one egg, some sugar and of course, peanut butter! I’ve always been a fan of the original recipe, but you can easily change it up and tweak it to your liking! Use chunky peanut butter instead of smooth, or add chocolate or peanut butter chips for a little more flavour.
You could even add some vanilla for extra sweetness, or oatmeal for a slightly healthier version. Did I mention this recipe is gluten free?? My husband couldn’t wait to eat these cookies when I was finished. He’s been gluten free for years now and I rarely bake treats that he can actually eat. He was so happy to have these!

3 Ingredient Peanut Butter Cookies:
The full printable recipe is at the end of this post, but here’s a list of what you’ll need:
- Peanut Butter
- White Sugar
- 1 Egg
This easy peanut butter cookie recipe is so simple! But surprisingly, you can switch up 2 out of 3 of the ingredients.
I like to use smooth peanut butter, but you could use chunky peanut butter or natural peanut butter for a different flavour and texture.
I also like to use white sugar, but it’s completely interchangeable with brown sugar. The flavour difference between the two sugars is subtle. But peanut butter cookies made with brown sugar are slightly darker and slightly thinner.
Once you’ve combined all the ingredients, mix them together until your dough is soft and smooth. Scoop out enough dough to roll a 1 inch ball. Place the balls of dough on a parchment lined baking sheet so that they’re 2 to 3 inches apart. You should have enough dough to make 12-15 balls.
If your dough is a little too soft and sticky for rolling, pop it in the fridge to chill for 5-10 minutes.
Using a fork, press down slightly on your dough balls making a hashtag or criss-cross pattern.
This will flatten them a little so they bake more evenly. Plus you’ll get that classic peanut butter cookie look – Who came up with that anyway?!
Pop them into the oven at 325F for about 20 minutes, or a little less time for softer, chewier cookies.
Depending on how strong your oven is, you might want to check on them after 10 minutes just to make sure they aren’t over baking.
Voila! You have deliciously chewy and flavourful cookies in less than 30 minutes!
White Sugar vs. Brown Sugar in Peanut Butter Cookies
I tried this recipe a couple of times. We tried doubling the amount of sugar (which some people will LOVE, but it was a little too sweet for my tastes). And then we experimented with brown sugar vs white sugar. The difference is subtle, but definitely noticeable.
In each batch of cookies we used 1 cup of peanut butter and 1 egg. The only thing that changed was the sugar type and amount.
Take a look at the photo below. The peanut butter cookie on the left was made with 1 cup of brown sugar. The peanut butter cookie on the right was made with 1 cup of white sugar. See how the cookie made with brown sugar is slightly darker and thinner than the cookie made with white sugar?
Brown sugar also has a slightly different flavour profile. The molasses gives it a very slight caramel/toffee flavour and I thought that might be a nice compliment to the peanut butter. It’s definitely worth a try if you’re up for a little experimenting. The texture is slightly different, and personally, I still prefer the cookies made with white sugar, but I’m glad I tried it.
The second time I made the cookies, I made them with 1 cup of white sugar instead of brown sugar. If you like sweet treats, then you’ll love trying that! The cookies made with 1 cup of white sugar turned out a little thinner than the cookies made with 1/2 cup of white sugar. But still thicker than the cookies made with brown sugar.

Tips for making Easy Peanut Butter Cookies
- Use a cookie scoop for perfectly uniform and evenly baked cookies.
- Place cookies on the middle rack of the oven for even heat distribution.
- Add peanut butter chips to boost the flavour.
- Dip a wet fork in sugar before making your criss-cross pattern to prevent it from sticking to the dough.
- For an easy make-ahead dessert, freeze your cookies in an air-tight container for up to one month. Let them defrost at room temperature for at least an hour before serving.
- Use this recipe to teach kids about baking! They can learn how to measure and help roll the dough into balls.

Easy Peanut Butter Cookies
- 1 cup peanut butter
- 1/2 cup white sugar
- 1 egg large
- Preheat the oven to 325F.
- Combine the peanut butter, sugar and egg in a large bowl and mix until ingredients are well blended, and the dough is smooth.
- Scoop out enough dough to roll a 1 inch ball. Complete 12-15 balls and place them about 2- 3 inches apart on a parchment lined baking sheet.

- Bake the cookies for 20 minutes at 325F or until they have started to brown. Remove from the oven and allow them to cool for about 10 minutes before serving.
