Before my husband and I had kids, we used to live in a small house with a tiny little porch that led to our front door. That porch was the best for fall decor! Don’t you find that small areas are so much easier to decorate? (A big pot of mums and a pumpkin and it was good to go…) I get a little overwhelmed with the large porch we have now, that spans almost the entire front of our house. Which is probably why we have 4 lonely pumpkins just sitting on the step, uncarved.
Everyone keeps asking what I’m going to turn them into, but at this point, I’ll be happy just to get them cleaned out and carved with plain-jane triangle eyes. Two out of our three little munchkins are old enough to happily help me carve the pumpkins for about 10 minutes. And then I’ll be left with 4 half carved pumpkins and a floor full of pumpkin goop. *sigh*
I remember, one of the first years we were married, my husband and I got ambitious and carved out these amazing patterns on our pumpkins. And then the day after Halloween, to my shock and amazement, he chopped up the pumpkins and did the unthinkable – yes, he turned that pumpkin into a pie. A PIE made from a real pumpkin!? It was a crazy idea that had never even crossed my mind as a possibility!
It actually makes me feel a little relieved to know that we can turn our pumpkins into a pie (or soup, or muffins…), if I don’t get around to carving them. Not that realistically I would actually prepare a fresh pumpkin, but hey, I can dream, right?
Fresh pumpkin is amazing, no doubt, but I’m more of a buy-a-can-of-pumpkin-puree kind of girl myself. I’ve been experimenting with some pumpkin recipes, and my goodness you can make some amazingly delicious treats! Pumpkin is kind of a crazy food that seems as though it will go into just about anything. Pie, soup, cookies, bread, pasta – almost anything you can think of, and I bet you can find a great recipe for it with pumpkin!

This list of the best pumpkin recipes has me inspired. Oh, that soup! My mouth is watering just looking at it! I always find that one can of pumpkin puree is enough to make 2 or 3 different things.
