This soft and tender pumpkin bread has the most delicious combination of flavors, and is so tasty you won’t be able to stop eating it. It’s the perfect fall dessert or snack. And best of all, the recipe makes enough for two loaves, so you’ll have pumpkin deliciousness to snack on tomorrow, too!
When it comes to pumpkin spice, I would say that I’m a moderate fan. Every year around this time, though, people start going crazy for all things pumpkin spice! I was walking through the grocery store this week, and found an insane variety of pumpkin spice products, from cookies to cereal to air fresheners and candles. I’m all for pumpkin spice, but only when it makes sense. Pumpkin spice cookies? Of course. Pumpkin spice frosted flakes? Not so much. Pumpkin spice peanut butter? Now you’re talking crazy. And as much as I love that delicious pumpkin spice smell, I would rather it came from something delicious that I baked, instead of a fake candle or air freshener.
I have a really great pumpkin chocolate chip cookie recipe that I’ve been making for years and years now, and it is the absolute best. One thing I don’t have, though, is a go-to pumpkin bread recipe. That is, until now! I made this pumpkin bread a few weeks ago for the first time, and it totally knocked my socks off. My kids and I have made it several times since then, and it never disappoints!
I first saw this delicious pumpkin bread on Lil’ Luna and couldn’t wait to try it! I left off the streusel to keep things simple, then baked it in two large loaf pans instead of mini pans. It came out so delicious! It is such a soft, tender, moist bread, and perfectly captures that delicious pumpkin spice flavor. Yum!
The full recipe is at the bottom of this post, but here’s what you’ll need:

Although the ingredient list for this pumpkin bread is a little on the long side, it’s made from ingredients that I nearly always have on hand, and it mixes up really quickly. I used my stand mixer, but you could easily mix it by hand instead.
I like to line my loaf pans with parchment or foil to make it easier to lift the bread out after it’s baked. It’s one of my favorite easy cooking hacks for a beautiful loaf of bread!

Let the bread cool in the pan for about ten minutes, then move it to a cooling rack to cool completely. As tempting as it is to dig in right away, the bread is much easier to slice after it has cooled. This bread is so tender and moist, but it still holds together really well and doesn’t crumble or fall apart as you slice it. It will keep for several days if stored in a zippered bag, but be sure to cool it completely before putting it in the bag so it doesn’t get soggy.
This sweet and gently spiced pumpkin bread is definitely one to add to your fall baking list! Not only is it easy to make, it’s also totally delicious. The pumpkin flavor is so yummy, and it goes perfectly with a warm cup of cocoa or apple cider!
- 3 1/2 cups Flour
- 2 teaspoons Baking soda
- 1 teaspoon Salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1 1/2 cups Sugar
- 1/2 cup Brown sugar
- 1/2 cup oil
- 4 eggs
- 1/2 cup applesauce
- 1 can 15 ounces pumpkin puree
- 2/3 cup Water
- Preheat the oven to 350. Line two loaf pans with foil or parchment, spray with cooking spray, and set aside.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. In a large bowl or the bowl of a stand mixer, beat together the oil, apple sauce, sugar, brown sugar, eggs, pumpkin, and water.
- With the mixer running, slowly add the dry ingredients to the wet ingredients, and mix until just combined.
- Pour the batter into the prepared pans and bake 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then remove to a cooling rack.
