Hello again! It’s Alicia from The Baker Upstairs, and I have another delicious and easy dessert to share with you today. These strawberry crumb bars are totally irresistible, and easy to make. They have just seven simple ingredients, and taste amazing!
We’ve reached that gray time of year again, when I am SO READY for spring to come! We have a while yet until these cold winter days are gone, but I’m already dreaming of sweet summer fruit, and of warm days spent running around outside. I always look forward to berry season here in Oregon, and a few days ago I was craving the taste of those sweet Oregon berries. My grocery store has a sad and somewhat limited selection of produce this time of year, and everything just tastes a little weird when it’s out of season anyway. I really needed a little taste of summer! While rummaging in my pantry, I found a jar of home-canned strawberry jam from last summer, and got right to work making these amazing strawberry crumb bars!
These strawberry crumb bars have that sweet summery strawberry flavor that I love, wrapped up in two layers of sweet and buttery oat crust. They are seriously so good! I put a plate of them down on the table, and after his fourth bar, my husband turned to me and said, “I don’t know what it is about these bars, but I can’t stop eating them!” They are so simple, but sometimes the simplest desserts are totally the best. I love that I can make them year round and enjoy that summer berry flavor that I love any time!
Strawberry Crumb Bars
The full recipe is at the bottom of this post, but here’s what you’ll need:
- brown sugar
- baking soda
- strawberry jam
These strawberry crumb bars are so easy to make that my kids can make them all by themselves! You’ll start by mixing together all of the ingredients except the jam. You can use an electric mixer, or even just mix it together with your hands. The dough will be very dry and crumbly, but that’s totally okay! Press about two thirds of the dough into the bottom of a 9 x 9 baking dish to form an even layer.
Next, spread the jam over the top. I happened to have some homemade strawberry jam on hand from last summer, but store-bought jam will also work well. I love to use a good chunky jam with lots of fruit flavor for these bars. It gives them so much flavor and makes them extra delicious!
Finally, sprinkle the remaining dough over the top of the jam layer. It will be loose and crumbly, and it gives the bars a delicious crisp texture on top after they are baked.
Bake the bars for 35-40 minutes, until the top is golden brown and crisp. As the bars bake, the jam firms up a little and develops a really nice soft and chewy texture. It’s the perfect complement to the crisp and buttery oat crust!
Let the bars cool completely, then slice and serve. I usually cut mine into sixteen pieces, which is a good serving size for me. They’re a little on the rich side, but perfectly crisp and sweet!
If you’re making these strawberry crumb bars for a bigger crowd, you can easily double the recipe and bake it in a 9 x 13 baking dish. The bars will be a little thicker, and will most likely need 60-70 minutes to cook completely. These bars will keep well for several days, so they’re perfect for making ahead of time. They always seem to disappear immediately at my house, though!
Strawberry Crumb Bars
- 1 cup Flour
- 1/4 teaspoon Baking soda
- 1/4 teaspoon Salt
- 1 cup old fashioned rolled oats
- 1/2 cup Packed brown sugar
- 1/2 cup butter softened
- 1 cup strawberry jam
- Preheat the oven to 350 and line an 8 x 8 baking dish with parchment or foil, and set aside.
- In a medium bowl, mix together the flour, baking soda, salt, oats, and sugar. Mix in the butter to form a crumbly dough.
- Press two thirds of the dough into the prepared baking dish. Spread the strawberry jam evenly over the top, then sprinkle the remaining dough on top.
- Bake 35-40 minutes, or until lightly golden on top. Remove and let cool before slicing and serving.
These sweet strawberry crumb bars are so delicious and easy to make! With a buttery oat crust and sweet strawberry filling, they are totally irresistible!
