Reese's Pieces Peanut Butter Eyeball Cookies
This is such a fun cookie for Halloween!

Ingredients

unsalted butter
softened

cup
Brown sugar
1/2
cup
smooth peanut butter
not crunchy or natural
1
teaspoon
Vanilla extract

egg
1 1/2

Flour
1/2
teaspoon
Baking soda
1/4
teaspoon
Salt
1

Reese's Pieces
1
or 2 packages candy eyeballs
1/2
cup
chocolate chips
optional... I think they taste better without chocolate chips
Instructions
Preheat the oven to 375F.
In a large bowl, beat together the butter and brown sugar until combined and fluffy.
Add the peanut butter and continue to beat until well combined.
Add the vanilla and egg and beat on low speed until combined.
In a separate bowl, whisk together the flour, baking soda and salt. Add it to the peanut butter mixture and mix it until just combined.
Stir in the Reese's pieces (and chocolate chips if you plan to use them). Do NOT add the candy eyes before baking.
Roll the dough into 1.5" balls (very slightly flattened) and set them on a parchment lined baking sheet about 3" apart.
Bake at 375F for about 10 to 12 minutes or until the edges start to turn golden. (Mine cooked for 11 minutes).
Remove from the oven and immediately press the candy eyes into the cookies. Use a toothpick to push them in place if it's too hot for your fingers.
Notes
1 package of candy eyes will give you enough for 2 eyes per cookie if you add them to all of the cookies in the batch.
