Combine all of the salad ingredients in a large bowl.
Add the olive oil, vinegar and honey to a small bowl and mix well. Season with salt and pepper.
Pour the dressing over top of the salad and toss gently to coat. Serve immediately.
Notes
This salad can be made several hours ahead. Place the sliced apples in a zip lock bag, add a squirt of lemon juice and toss to coat to keep them from going brown. Also, pack the dressing in a small container and don't add it to the salad until you're ready to serve.
