This creamy avocado pasta is so easy to make and it tastes amazing!

Ingredients
8 to 10ozfettuccine
1ripe avocado
1cupfresh spinach
1clovegarlic
1/4cupfresh basil leaves
1/4cupParmesan cheesegrated
1/4cupolive oil
1Tablespoonlemon juice
1/2cuppasta water
If you use parmigiano reggiano, I recommend adding about 1/2 teaspoon of salt
Instructions
Bring a pot of salted water to a boil. Cook the pasta according to package directions.
While the pasta is cooking, combine the avocado, spinach, garlic, basil, Parmesan cheese, olive oil, lemon juice and salt in a small food processor. Blend until smooth and creamy.
Keep 1/2 cup of pasta water then drain the pasta.
Add the avocado sauce to the fettuccine noodles and stir well. Let it sit, covered for 5 minutes before serving.
