Oatmeal Peanut Butter Cookies
Serves: 2 dozen
  • ½ cup butter, softened
  • ⅔ cup peanut butter
  • ½ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1 cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup old fashioned oats
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup peanut butter chips
  1. Preheat the oven to 375. Grease two baking sheets or line with parchment or silicone liners.
  2. In a large bowl, beat together the butter, peanut butter, sugar, and brown sugar until well blended. Add the egg and vanilla, and mix until combined.
  3. In a small bowl, whisk together the flour, oats, baking soda, baking powder, and salt. Pour the dry ingredients into the wet ingredients, and mix until just combined. Fold in the chocolate chips.
  4. Scoop the dough into one inch balls on the prepared baking sheet. Bake 10-12 minutes, until lightly browned on top. Let cool on the baking sheet for 10 minutes before moving to a cooling rack
