Coconut Chocolate Chip Oatmeal Cookies
Serves: 3 dozen
  • 1 cup butter, at room temperature
  • 1 cup brown sugar
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 2¾ cup old-fashioned oats
  • 2 cups chocolate chips
  • 1 cup shredded coconut
  1. Preheat the oven to 350, and line three baking sheets with parchment or silicone liners.
  2. In a large bowl or the bowl of a stand mixer, cream together the butter and sugar. Add the eggs and vanilla, and mix until combined.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and oats. Pour the dry ingredients into the wet ingredients and mix until just combined. Stir in the chocolate chips and coconut.
  4. Scoop the dough into 1 inch balls and place on the prepared baking sheets, spacing 1-2 inches apart. Bake 10-12 minutes, or until lightly browned.
