Reese's Peanut Butter Cookies
Serves: 2 dozen cookies
  • 8 tablespoons butter, softened
  • ½ cup brown sugar
  • ½ cup sugar
  • ⅔ cup peanut butter
  • 1 egg
  • ½ teaspoon vanilla
  • 1½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 20 Reese's minis, chopped
  1. Preheat the oven to 375. Line two baking sheets with parchment or spray with cooking spray, and set aside.
  2. In a large bowl or the bowl of a stand mixer, beat together the butter, brown sugar, sugar, and peanut butter, until smooth. Add the egg and vanilla and beat until smooth.
  3. Add the flour, baking soda, and salt, and mix until combined. Gently fold in the Reese's candies, reserving about two tablespoons of candy.
  4. Scoop the dough by rounded tablespoons onto the prepared baking sheets. Sprinkle each ball of dough with a few additional pieces of candy.
  5. Bake 9-11 minutes, or until just slightly browned around the edges.
